Baked Pineapple

The tropical taste of pineapple made more exotic!


1 pineapple, peeled, cored and cut into slices

1 cup dark rum 

1/4 cup palm sugar or brown sugar

Coconut Ginger Ice Cream (optional)

Candied ginger, chopped (optional)

Cooking Instructions:

PREHEAT oven to 300°F. Place pineapple slices in baking dish. Mix rum and sugar until well blended. Spoon over pineapple slices.

BAKE, uncovered, 1 hour or until liquid evaporated and pineapple is tender. Serve with Coconut Ginger Ice Cream, if desired. Garnish with chopped candied ginger, if desired.
