Baked Pineapple

The tropical taste of pineapple made more exotic!

INGREDIENTS

Ingredients

  • 1 pineapple, , peeled, cored and cut into slices
  • 1 cup (250 milliliters) dark rum
  • 1/4 cup (125 milliliters) palm sugar or brown sugar
  • Thai Kitchen® Coconut Ginger Ice Cream , (optional)
  • Candied ginger, chopped , (optional)

INSTRUCTIONS

  • 1 PREHEAT oven to 300°F. Place pineapple slices in baking dish. Mix rum and sugar until well blended. Spoon over pineapple slices.
  • 2 BAKE, uncovered, 1 hour or until liquid evaporated and pineapple is tender. Serve with Coconut Ginger Ice Cream, if desired. Garnish with chopped candied ginger, if desired.
